2 c. crisp spinach
1 c. endive
1 sm. red onion, thinly sliced
3 diced hard-cooked eggs
4 slices bacon, cooked and crumbled

Tear spinach and endive in bite-size pieces.

DRESSING:

1 c. mayonnaise (Hellmann's)
1/2 c. sugar
1/2 c. tarragon vinegar
1/2 tsp. tarragon leaves

Mix well; will not separate.
