VEGETABLE CONGEALED SALAD 
1 (0.6 oz.) pkg. sugar free, lime-flavored gelatin
2 c. boiling water
1 3/4 c. cold water
1/4 c. vinegar
1 c. chopped celery
1 c. shredded carrot
2 tbsp. chopped sweet red pepper
2 tbsp. chopped green onions
Vegetable cooking spray
Lettuce leaves (optional)

Dissolve gelatin in boiling water in a medium bowl, stirring well. Stir in cold water and vinegar. Chill until mixture is the consistency of unbeaten egg white. Fold in vegetables, and pour gelatin mixture into 8 (2/3 cup) molds coated with cooking spray. Chill until firm. Unmold onto lettuce leaves, if desired. Yield: 10 servings.

Each serving: 1/2 cup. Exchanges: free. 10 calories. 2 gm. carbohydrates, trace of protein, trace of fat, trace of fiber, 16 mg. sodium, 0 mg. cholesterol.
