BETSY'S SALMON CAKES 
15 1/2 oz. cooked salmon
3/4 c. bread crumbs
1/2 c. mayonnaise
1/2 chopped onions
1/4 c. minced bell pepper
1/4 c. minced celery
1/4 c. parsley flakes
1 egg
2 tsp. lemon zest (or juice)
1 tsp. Dijon mustard
1 tsp. Worcestershire sauce
6 drops Tabasco sauce

Mix all ingredients together and make patties. Coat with extra bread crumbs. Saute in butter.
