CURRIED CHICKEN SALAD 
2-3 c. cooked chicken or turkey, cubed
1 (4 oz.) can water chestnuts, sliced and drained
1/2 lb. seedless green grapes, halved or 1 (11 oz.) can mandarin oranges,
drained
1 c. chopped celery
1 c. mayonnaise
1/2 tsp. curry powder (optional)
2 tsp. soy sauce
2 tsp. lemon juice
Salt to taste

Combine chicken, water chestnuts, grapes or orange sections, and celery. Mix remaining ingredients. Add to chicken. Toss well and chill. This is excellent on a fresh croissant or bed of lettuce.
