HAM PANCAKE PIE 
2 med. sweet potatoes, peeled & sliced thinly
3 c. (about 3/4 lb.) diced, cooked ham
3 med. apples, cored & sliced
1/2 tsp. salt
1/4 tsp. pepper
3 tbsp. brown sugar
1/4 tsp. curry powder
1/3 c. water or apple juice
1 c. pancake mix
1 c. milk
1/2 tsp. dry mustard
2 tbsp. melted butter

In a 2 quart greased baking dish, layer half the potatoes, half the ham, and half the apples. Combine salt, pepper, brown sugar and curry powder and sprinkle half the mixture over layers in dish. Repeat with the remaining ingredients. Pour water or juice over all. Cover mixture and bake at 375 degrees until potatoes are tender, about 40 minutes. Beat together pancake mix, milk, mustard and butter. Take casserole from the oven when potatoes are done and pour pancake batter over the top. Bake 20 minutes more, uncovered (until pancake is puffed and golden).
