MUSHROOM QUICHE | |
Preheat oven to 400 degrees. FILLING: 1 tbsp. onion, chopped 2 tbsp. oil or butter 1 c. mushrooms, sliced 3 eggs 1/2 lb. cottage cheese 1/2 tsp. kelp Pinch of paprika 2 tbsp. chopped fresh parsley Saute the onion lightly in a little oil or butter until soft. Add mushrooms and cook just until they begin to soften. Beat the eggs and mix well with the cottage cheese. Add the mushrooms and onion, seasonings and parsley. Pour into prepared pie crust and bake in preheated 400 degree oven for 15 minutes. Lower the heat to 350 degrees and bake for 40 or 50 minutes more or until the filling is firm. Yield: 8 servings. |
