PEANUT BUTTER COOKIE BITES 
3/4 c. sugar
1/3 c. peanut butter
1/4 c. butter, softened
2 egg whites
1/2 tsp. vanilla extract
1 3/4 c. all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
Vegetable cooking spray

Combine first 3 ingredients in a large bowl; beat at medium speed of an electric mixer until light and fluffy. Add egg whites and vanilla; beat well.

Combine flour, baking soda, and salt; gradually add to creamed mixture, stirring until well blended. Cover and chill dough 1 hour.

Shape dough into 48 balls. Place 2 inches apart on cookie sheets coated with cooking spray. Bake at 375 degrees for 10 minutes or until lightly browned. Remove from pans; cool on wire racks. Store in an airtight container.
