APPLE FRUIT NUT BAR (No
Shortening)
 
1 2/3 c. flour
2 tsp. baking powder
1/4 tsp. salt
2 eggs or egg substitute
1/2 c. sugar
1/2 c. light brown sugar
2 tsp. vanilla
2 1/2 c. finely chopped tart apples
3/4 c. chopped walnuts
Cinnamon

Combine flour, baking powder and salt. Set aside. In bowl beat eggs, sugars and vanilla. Beat 3-4 minutes on high speed. Stir in dry ingredients by hand mixing just until all is combined. Fold in apples and walnuts.

Spread batter in pan pushing well into corners. Sprinkle with cinnamon. Bake at 350 degrees for 30-35 minutes until cake is pale tan and firm to touch. Cool and cut into squares.
