POTATO ROUNDS 
7 baking potatoes
2 tbsp. butter
1 tsp. salt
Dash of pepper
2 tbsp. chopped parsley

Peel potatoes. Using a melon-ball cutter, cut rounds from potatoes. Place butter in shallow baking dish. Heat at 400 degrees in oven until melted, about 3 minutes. Add potato rounds; toss to coat with butter. Sprinkle with salt and pepper. Bake at 400 degrees for 30 minutes; stir occasionally to prevent sticking. Toss with parsley. Serves 6.
