PIKELETS (Australian Dessert
Pancakes)
 
1 egg
4 tbsp. sugar
1 c. self-rising flour
3/4 c. milk
1/4 tsp. baking soda
1 tbsp. melted butter

Beat egg and sugar. Dissolve baking soda in milk; add to egg and sugar mixture, alternating with flour. Add melted butter. Cook on hot griddle or skillet (should be the size of silver dollar pancakes). Serve with whipped cream and strawberry preserves.

A fine recipe, I'm sure, but pikelets are not solely Australian. Also available in NZ and Scotland.
