CHICKEN AND CARROT SALAD 
1 tbsp. freshly squeezed lemon juice
1 c. mayonnaise
2 c. diced cooked chicken
1 c. shredded carrots
3/4 c. diced celery
1/2 c. slivered blanched almonds
2 tbsp. finely chopped onion
Salt to taste
Lettuce

Stir lemon juice into mayonnaise. Toss with chicken, carrots, celery, almonds, onion and salt. Chill and serve on lettuce. Yield: 4 servings. Good served with tomato aspic.
