BEEF TENDERLOIN 
2 lb. beef tenderloin
2 tbsp. soft butter
1/4 c. chopped green onion
2 tbsp. butter
2 tbsp. soy sauce
1 tsp. Dijon mustard
Dash of ground pepper
3/4 c. dry sherry

Spread tenderloin with soft butter. Bake uncovered on rack in shallow pan at 400 degrees for 20 minutes. Cook onions in 2 tablespoons butter; add soy, mustard, pepper, stir in sherry. Heat to boiling, pour over meat. Bake 30 minutes. Baste with sauce.
