STROGANOFF TO DIE FOR | |
2 lb. sirloin 1 medium onion, chopped 1 large bell pepper, chopped 1 can Campbell's tomato soup 1 pt. sour cream 1 small can mushrooms 4 c. Minute rice 5 tbsp. flour salt and pepper 3 tbsp. oil Cut meat into 1 or 2-inch cubes. In a Ziploc bag, put flour, salt and pepper. Put cubed meat in bag and shake. Take meat from bag and place in skillet (electric) on 350°F with 3 tablespoons oil. Brown on all sides of meat. Add onion to meat until the onion becomes transparent. Cook for about 20 minutes on low heat. Add bell pepper and mushrooms; stir for a few minutes. Add tomato soup and stir and let cook on simmer 30 minutes. Prepare rice as directed on box of Minute rice. Add sour cream and stir just before serving. Serve on bed of rice. I like asparagus on the side for a vegetable. Note: If you use more than 2 pounds sirloin, add another can of tomato soup. This dish is sooooo yummy...... |
