ONE HUNDRED THIRTY YEAR OLD
APPLE CAKE
 
3/4 c. oil
2 c. sugar
2 eggs
1 tsp. vanilla
3 c. cake flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
3 c. chopped raw apples
1 (20 oz.) can pineapple, crushed and drained
1 c. nutmeats

Beat oil, sugar, eggs and vanilla until light and lemon colored. Sift flour, baking powder, soda, cinnamon, salt and mix with above mixture. Then add apples, pineapple, nutmeats. The batter will be thin; don't worry! Pour into greased, floured 9x13 inch pan. Bake 350 degrees (in middle of oven) for 1 hour or until the cake springs back to your touch in the center.

FROSTING:

Beat 8 ounces cream cheese and 1/4 cube of butter until light. Add 1 cup confectioners sugar (add more if necessary to attain good spreading consistency). Add 1 cup raisins and spread on cool cake. Store in refrigerator.
