CAROL'S FAVORITE ITALIAN
CASSEROLE
 
2 lbs. very lean ground beef
1 tbsp. minced onion
2 (8 oz.) cans tomato sauce
2 (6 oz.) cans tomato paste
Salt
2 tsp. basil
2 tsp. sugar
2 pinches garlic powder
2 dashes pepper
1/2 c. bread crumbs
2 (3 oz.) cans sliced mushrooms, drained
2 (10 oz.) pkgs. frozen chopped spinach, thawed and drained
2 c. Ricotta cheese
2 eggs
1 lb. sliced Mozzarella
8 oz. shredded Mozzarella

1. Brown ground beef and add onions.

2. Stir in tomato sauce, tomato paste, salt, and next 4 ingredients. Reduce heat. Simmer 10 minutes, stirring frequently, until mixture is thickened.

3. Stir in bread crumbs and mushrooms.

4. Preheat oven to 350 degrees.

5. Pat spinach dry. Combine spinach, Ricotta and egg.

6. In baking pans 9x13 and 8x8 spread half of meat mixture. Top with spinach mixture. Next layer the sliced Mozzarella. Next layer remaining meat mixture. Finally, sprinkle layer of shredded Mozzarella.

7. Bake 45 minutes or until hot and bubbly. Serves 12.
