INDIAN FOOD (RICE) | |
1 lb. Basmati rice 1 lb. sugar 8 cardamons, crushed 12 cloves 2 oz. raisins 2 oz. cashew nuts 1 tbsp. saffron color (pinch of saffron, soaked in 1 tbsp. hot water) 1 tbsp. butter Wash the rice and set to boil in just enough water. When half cooked add sugar, stir well and lower the heat. To prevent the rice from sticking, add a little butter. Now, add to the well cooked rice, the saffron color, the remaining butter, cloves, raisins, cashew nuts or any other dried fruits as desired. Mix all these well, stirring gently, so that the rice is thoroughly permeated with the saffron color. Remove the saucepan from the fire, and put in a medium oven, for 10 minutes. Sprinkle with cardamon powder, mix well and serve hot. Serves 4. |
