ZUCCHINI BREAD 
4 eggs
2 c. sugar
1 c. oil
3 1/2 c. flour
1 tsp. salt
1 c. raisins
1 1/2 tsp. baking soda
2 tsp. cinnamon
3/4 tsp. baking powder
2 c. zucchini, blended in blender
1 c. chopped nuts
1 tsp. vanilla

To chop zucchini, peel and place pieces in blender with water to cover. Chop well and drain.

Mix all ingredients well, put in 2 large greased and floured loaf pans. Bake at 350 degrees for 1 hour. Remove from pan after 10 minutes.
