BACON MUFFINS 
2 1/2 qt. (2 lb., 13 oz.) flour
5 tbsp. double action baking powder
2 1/2 tbsp. salt
2 1/2 tsp. sugar
5 eggs
4 1/2 c. milk
1 1/8 c. bacon fat
1 2/3 c. (8 oz.) bacon, cooked and chopped

Mix and sift dry ingredients together. Beat eggs, add milk, bacon fat and pieces. Add liquid to dry ingredients all at once. Stir until moistened; batter is not smooth. Use a scoop and dish muffins into well greased tins. Bake at 400 degrees for 20 to 25 minutes. Makes 48.
