POLLY'S PLUM CAKE 
2 c. sugar
2 c. self-rising flour
3 eggs, slightly beaten
1 tsp. nutmeg
1 tsp. cinnamon
1 c. salad oil
2 sm. jars plum baby food with tapioca
2 c. chopped pecans, if desired

Combine all ingredients and mix well. Mix with spoon, not electric mixer. Pour into tube pan sprayed with "Pam". Bake for 1 hour at 350 degrees. A few drops of red food coloring may be added, if desired.

TOPPING:

1 cube butter, melted
Juice of 1 lemon
Grated rind from 1 lemon
1 c. powdered sugar

Mix together. Spread part of mixture on top of cake while still hot from the oven; then spread rest of mixture on top after you turn cake out of pan. Let stand until topping can soak into cake; about 1 hour. Keeps well in refrigerator.
