2 lg. cans whole tomatoes (drain most of the juice - use only about 1/2 c. from the can) 1 lg. can tomato sauce 1/4 to 1/2 c. finely diced purple or white onion 1 to 4 minced fresh garlic cloves (depending on size, strength, personal preference) 1 or 2 tbsp. sugar 1/4 c. finely chopped fresh cilantro (sometimes called Chinese parsley) 2 to 5 canned jalapeno peppers or 1 to 3 fresh jalapeno peppers (fresh get hotter the next day) Put into a large bowl, which will eventually hold all the salad, tomato sauce and onion. The rest is prepared in a food processor. Hit the processor button to activate momentarily but not completely blend. Doing small portions at a time, chop the following ingredients in processor bowl; whole tomatoes, jalapenos, already chopped cilantro, minced garlic. As each portion is chopped to desired consistency pour off into the larger bowl. When finished, stir and add sugar to taste if desired. |
