CHILI RELLENOS 
8 oz. can Ortega green chilies, whole
1/2 lb. Jack cheese
1 lb. cheddar cheese
4 lg. eggs
1 tbsp. flour
1 c. evaporated milk (8 oz.)

Remove seeds from chilies, soak in water 5 minutes to 1 hour; drain chilies and place side by side on bottom of 9 x 12 inch greased cake pan.

Grate both Jack and cheddar cheese; spread over chilies. Mix egg, flour, salt, and evaporated milk together in separate bowl. Pour liquid over cheese at 360 degrees for 35 minutes.
