VANILLA ICE CREAM 
4 eggs
1 c. sugar
1 (14 oz.) can sweetened condensed milk
1 (3 oz.) pkg. vanilla instant pudding mix
1 tbsp. vanilla extract
1 1/2 qts. milk, divided

Beat eggs in a large bowl at medium-high speed of an electric mixer for 1 minute. Add sugar, and beat well. Add sweetened condensed milk, pudding and vanilla; beat well. Stir in 1 quart milk. Pour mixture into freezer can of a 1 gallon, hand-turned or electric freezer. Add remaining 1/2 quart milk. Freeze mixture according to manufacturers instructions. Let ripen at least 1 hour. Yield: about 2 1/2 quarts.

Chocolate Ice Cream Variation: Follow recipe for Vanilla Ice Cream, except add 1 (16 ounce) can chocolate-flavored syrup when adding sweetened condensed milk, pudding mix, and vanilla. Yield: 3 quarts.

Peppermint Ice Cream Variation: Follow recipe for Vanilla Ice Cream, except add 1/2 teaspoon peppermint extract when adding vanilla and 1 cup crushed peppermint candy when adding the last 1/2 quart of milk. Yield: about 3 quarts.
