LO - CAL MIXED VEGGIES WITH MUSTARD DRESSING | |
1 tbsp. plus 1 tsp. reduced butter, melted 1 tbsp. chives 2 tsp. Dijon mustard 1 tsp. lemon juice 1 garlic clove, minced Pinch of white pepper 10 broccoli spears 1 1/2 c. baby carrots 1/2 c. snow peas 12 cherry tomatoes 8 med. scallions, trimmed to 3" 1 tbsp. lemon peel In small bowl, combine butter, chives, mustard, lemon juice, garlic and pepper; set aside. On large round serving plate, arrange broccoli (stems out) around edge of plate; place carrot next to each broccoli. Cover with vented plastic wrap and microwave 5 minutes on high. Place snow peas and cherry tomatoes in center of plate and scallions between broccoli and carrots; drizzle chive mixture evenly over veggies. Cover with vented wrap; microwave high 2-2 1/2 minutes. Stand, covered, 5 minutes; sprinkle lemon peel before serving. Each serving 1/2 fat, 3 vegetables. |
