CHILI 
2 1/2 lbs. ground beef (extra lean)
2 med. onions
2 tbsp. vegetable oil (low fat)
1 tbsp. chili powder
1 tbsp. black pepper
2 (1503) cans red kidney beans
2 (1503) cans stewed tomatoes
Salt to taste

Saute onions in oil in large pot on medium heat. Add beef and stir while it browns. Add beans and tomatoes and chili powder; add salt and pepper. Cook, uncovered for 30 to 60 minutes, stirring occasionally. Serve in bowls with crackers, or serve on top of bread slices.

Variation: Sprinkle grated Parmesan cheese on top.
