BLACK WATER HATTIE JAMBALAYA 
1 lg. onion
1 lg. bell pepper
2 pods minced garlic
Minute Rice
2 tbsp. bacon grease
1 sm. pkg. cooked dried blackeyed peas
1 lb. sausage
3 bay leaves
Salt to taste
Cayenne pepper to taste

Prepare blackeyed peas ahead by soaking overnight. Put blackeyed peas in large boiling pot and add cayenne pepper, garlic, salt, and a slice of salt pork. Bring blackeyed peas to a boil and simmer until tender.

In a separate skillet, saute onion, bell pepper and garlic in bacon grease. Brown sausage in this mixture. Pour off excess grease. Meanwhile, prepare Minute Rice in separate pot using instructions on box. Add meat mixture, rice and bay leaves to blackeyed peas. Season to taste and allow to simmer for 1/2 hour. Serve when ready.
