ZUCCHINI MUFFINS 
2 eggs
1/2 c. each packed brown sugar and honey
1 tsp. vanilla extract
1 3/4 c. all-purpose flour
1 tsp. each salt and baking soda
1/2 tsp. each baking powder and ground nutmeg
1 1/2 tsp. ground cinnamon
1 c. granola-type cereal
1/2 c. chopped nuts
2 c. zucchini (shredded)

In a large bowl, beat eggs lightly, then beat in sugar, honey, melted butter and vanilla. Add flour, soda, salt, baking soda, salt, baking powder, nutmeg and zucchini.

Spoon into 14 large muffin tins and bake at 350 degrees for 30 minutes. Serve warm or cool completely. Wrap airtight and freeze.
