ZUCCHINI JELLY 
6 c. grated zucchini (peeled and seeded)
1 c. water
7 c. sugar
1 (20 oz.) can crushed pineapple (drained)
2 tbsp. lemon juice
1 (6 oz.) pkg. apricot Jello

Boil zucchini and water for 6 minutes. Add sugar, pineapple and lemon juice. Boil 6 more minutes. Add Jello and boil 6 more minutes. Makes 5 pints.
