BLUEBERRY ORANGE MUFFINS | |
3/4 c. blueberries 1/2 tsp. cinnamon 1/2 tsp. baking soda 1 tbsp. baking powder 1 c. uncooked oats 1 1/3 c. all-purpose flour 2 tsp. grated orange peel 1/3 c. orange juice 2/3 c. milk 2 egg whites, lightly beaten 1/3 c. packed brown sugar 1/4 c. Crisco shortening Warm oven to 400 degrees. Put foil or paper liners in 12 medium muffin cups. Combine brown sugar and shortening in large bowl. Beat at medium speed of electric mixer or use fork until blended well. Gradually stir in orange peel, egg whites, milk and orange juice. Combine cinnamon, flour, oats, baking powder and baking soda. Stir into liquid ingredients until just blended. Add blueberries. Put mixture into muffin cups, filling up to 2/3 of it. Bake at 400 degrees for 18 to 20 minutes. |
