ZUCCHINI CASSEROLE 
1 lb. zucchini, shredded
1 1/2 tbsp. onion, grated
1-2 tbsp. chopped green pepper; optional
1 1/2 c. bacon flavored cracker crumbs with 1/4 c. melted (save 1/2 c. for topping); can use reg. crackers and add bacon drippings
1 egg, beaten
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. grated cheddar cheese

Bake at 325 degrees for 1 hour. This can be doubled or tripled in quantity, frozen, thawed and then baked.
