HUSBAND'S BEAN SOUP | |
2 tbsp. baking soda 1 lb. navy beans 1 lb. smoked ham hocks 2 med. size onions 2 med. potatoes, peeled & cubed Salt & pepper to taste In a large 3 quart pot, place beans and cover with water. Place on high heat burner. Add 2 tablespoons of baking soda. Stir in and watch carefully. Let come to a boil. Drain beans through colander. Rinse beans thoroughly and return to pot. Cover with about 2 inches water. Peel onions and cube and add to water. Add ham hocks and put on high until boiling. Simmer and slowly cook for approximately 1 1/2 to 2 hours. Salt and add potatoes. Add additional water if needed and return to low heat. Check beans and potatoes for softness. Serve with onions and corn bread. |
