BAKED BEANS | |
2 c. beans (marrow) 1/4 to 1/3 c. molasses 1/4 tsp. mustard 1/8 tsp. pepper 2 c. hot water (bean water plus hot water to make 2 c.) 1 sm. to med. onion, grated 1/4 to 1/3 c. ketchup Slices of salt pork (sliced when frozen, it's easier) Soak beans overnight, drain. Cook beans slowly in boiling water, about 1 hour or until tender. Drain and save water. Put beans in greased baking dish. Mix molasses, mustard, pepper, water, onion and ketchup. Pour over beans; slice salt pork and put on top. Bake at 375 degrees for 2 1/2 hours. Turn salt pork once. Use large casserole. |
