SANDY SUE'S AND LYNDA LOU'S CHOCOLATE-PEANUT BUTTER FUDGE | |
3 c. sugar 1/3 c. powdered cocoa (approximately) 1 1/2 c. milk (I use nonfat milk) 1 c. peanut butter (approximately) 1/2 c. chopped walnuts Mix cocoa and sugar in large pan. Add milk. Cook over medium high heat, stirring constantly. It will boil up, then back down. Cook to soft ball stage. (Cooking too long causes it to be dry and crumbly.) Remove from heat. Add peanut butter and nuts and beat until it thickens and loses some of the gloss. (Don't keep it in the pan too long, or you won't be able to get it out.) Pour into a 9x12 pan--or smaller. You can butter the pan, but that adds calories. |
