GRILLED CHICKEN 
MARINADE:

1 c. fresh orange juice
1/2 c. fresh grapefruit juice
1/4 c. peanut oil
1 clove garlic, crushed
1 tsp. brown sugar
1 tsp. dried tarragon
1 tsp. ground pepper

Combine all marinade ingredients. Pour over chicken and marinate 3 hours, turning occasionally. Charcoal grill 45 to 60 minutes, turning and basting frequently. Serve with Maltaise Sauce.

MALTAISE SAUCE:

4 egg yolks, whipped
Pinch of salt
3/4 c. unsalted butter, melted
2 tbsp. lemon juice
3 tbsp. fresh orange juice
1 tsp. orange rind, grated

Combine egg yolks and salt. Gradually drizzle butter into egg yolks. When sauce has absorbed butter, add lemon juice. Before serving, add orange juice and rind.
