WHOLE WHEAT ORANGE AND CARROT
LOAF
 
1 1/4 c. whole wheat flour
1 tsp. cinnamon
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 eggs, slightly beaten
Grated peel and juice of 1 orange (1/3 c.)
1/3 c. honey
1/4 c. salad oil
1 c. shredded raw carrots
1/2 c. chopped walnuts
1/2 c. raisins

In a large bowl, combine the flour, cinnamon, baking powder, soda and salt. Combine the eggs, orange peel and juice, honey and oil; add to dry ingredients all at once. Stir in carrots, nuts and raisins.

Pour into well greased 9x5x3 inch loaf pan. Bake in preheated 350 degree oven 1 hour. Cool 10 minutes. Remove from pan. Cool on rack.
