BAKED CHICKEN OR FISH 
2 1/2 to 3 lbs. frying chicken, cut up and skinned
2 tbsp. butter or oil
2/3 c. Mission Mix
1 tsp. paprika
1/4 tsp. pepper
1 tsp. salt (optional)

Heat oven to 425 degrees F. Put Mission Mix, paprika, pepper, and salt into a plastic bag. Dip pieces of chicken in milk and then shake them in the bag one or two pieces at a time. Heat butter or oil in baking pan. Place chicken in pan and bake, uncovered, 35 minutes. Turn and bake until done or about 15 minutes. High altitude, bake 40 minutes; turn and bake 20 minutes.
