BAKED CHICKEN BREASTS 
4 med. chicken breasts
1/2 c. bread crumbs
1/2 c. grated Parmesan cheese
1 tsp. salt or less
1 egg, beaten
2 tsp. oil
1 c. grated cheddar cheese

Skin and bone chicken. Combine bread crumbs, Parmesan, and salt on a plate. Beat egg and oil in a bowl. Dip chicken in egg, then bread crumbs. Bake at 350 degrees for 30-35 minutes on a cookie sheet or baking pan, until tender and slightly browned. Sprinkle with cheddar cheese. Bake 5 minutes (or less) to melt cheese.

For variety, substitute wheat germ for part of the bread crumbs. To crumbs, add herbs such as thyme, basil, marjoram, oregano, garlic powder or parsley. Try substituting grated or sliced Swiss for the cheddar; or use chicken parts and bake for 1 1/2 hours.

This freezes well. Simply thaw and heat the chicken parts, add the cheese and it's ready to serve.
