TURKEY OR CHICKEN ENCHILADAS 
1 c. chicken or turkey, cooked and shredded in pieces
1 can green chiles (4 oz.)
1 c. chopped onion
1 c. chopped tomatoes
1 c. chopped green pepper
1 can cream of chicken soup
1 carton sour cream (8 oz.)
1 pkg. tortillas
1 c. Cheddar or Monterey Jack cheese

Mix all ingredients together except for chicken soup and sour cream. Fill all tortillas with mixture (roll up). Mix sour cream and soup. Place 1/2 mixture in bottom of 9x13 pan.

Next place all tortillas on top of this. Spread remainder of soup and sour cream mixture on top of tortillas. Sprinkle cheese over top. Bake 350 degree oven for 30-45 minutes.
