APPLE SNACK CAKE 
3/4 c. vegetable oil
2 eggs
2 c. sugar
2 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
3 c. peeled, chopped apples
1 c. chopped pecans
1 (6 oz.) pkg. butterscotch morsels

Combine oil, eggs, and sugar in large mixing bowl. Beat at medium speed of electric mixer until well mixed. Combine flour, baking soda, baking powder, salt, and cinnamon; stir. Add dry ingredients alternately with apples to egg mixture, mixing well. Stir in pecans and half of butterscotch morsels. Spread batter in a greased 13 x 9 x 2 inch baking pan. Sprinkle batter with remaining morsels. Bake at 350 degrees for 55 to 60 minutes. Yields about 15 servings.
