SECRET INGREDIENT BLUEBERRY
MUFFINS
 
1/2 c. butter, softened
1 c. sugar
2 c. flour
1 c. buttermilk
1 tsp. baking powder
1 tsp. baking soda
2 eggs
1/2 tsp. salt
1 tsp. vanilla
1 1/2 c. blueberries dusted with flour

Mix butter, sugar, eggs and vanilla. Stir in flour, baking powder, baking soda and salt until blended. Add buttermilk and stir. Fold in blueberries.

Drop mixture into paper cup lined muffin tins. Bake at 350 degrees for 20-25 minutes.

If you don't have buttermilk, use 1 cup milk with 1 tablespoon white vinegar.
