BROCCOLI CORNBREAD 
1 pkg. cornbread mix
1 stick melted butter
1 sm. chopped onion
Salt to taste
4 eggs
1 c. cottage cheese
1 pkg. frozen chopped broccoli

Pour hot water over broccoli, drain and squeeze water out. Mix cornbread and eggs, add melted butter and mix well. Add cottage cheese, onion and broccoli. Pour into a hot iron skillet (oiled) and bake at 450 degrees for approximately 30 minutes. Use a spatula when removing from skillet as it tends to stick on the sides.
