OLD FASHIONED OATMEAL COOKIES
1 c. lard, butter, butter or shortening
1 c. brown sugar
1 c. white sugar
2 eggs
2 c. flour
3 c. old fashioned oatmeal
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 c. raisins
1 tsp. vanilla
1/2 c. buttermilk
1 c. chopped walnuts

Melt shortening in large skillet. Brown the uncooked oatmeal in the melted shortening. Remove from heat and set aside.

Plump the raisins by cooking them in a small amount of water (just enough for the raisins to soak up) approximately 2 or 3 tablespoons in a covered pan. Drain off any excess liquid and set aside.

In a large mixing bowl, mix together flour, baking soda, baking powder and cinnamon. Add sugar and vanilla. Add eggs, buttermilk and chopped nuts. Mix and stir until well blended. Add raisins and the oatmeal. Mix and stir until well blended. Drop on greased cookie sheet by heaping spoonfuls.

Bake at 375°F for 10 minutes.
