APRICOT NUT BREAD 
1/2 lb. dried apricots (about 1 1/2 c.)
1 1/4 c. boiling water

Cut apricots into pieces, wash, drain and cook in boiling water 7 minutes - drain and cool. 5 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/2 c. sugar 1/2 c. chopped nuts 1 egg 1 c. buttermilk 2 tbsp. melted butter

Mix and sift flour, baking powder, soda, salt and sugar; add nuts and mix. Beat egg, add buttermilk, melted butter and apricots. Mix - add all at once to dry ingredients and blend lightly (about 25 strokes). Pour batter into a greased pan 10 x 3 1/2 x 2 3/4 and allow to stand 20 minutes. Bake at 350 degrees about an hour.
