DOUBLE BAKED POTATO 
4 lg. baked potatoes
1/2 c. milk
2 tbsp. butter
1/2 tsp. salt
Dash of pepper, black
2 1/2 c. shredded American cheese
2 tbsp. green onion slices
4 crisply cooked bacon slices, crumbled

Cut a lengthwise slice from top of each potato; scoop out centers leaving 1/8 inch shell. Mash potatoes; add milk, butter, and seasonings. Beat fluffy; stir in 2 cups of cheese and onion. Fill shells; sprinkle with bacon. Place on ungreased cookie sheet; bake at 400 degrees, for 20 minutes. Top with remaining cheese; continue baking until cheese begins to melt.
