1 boiled potato, mashed (about 3 oz. size)
1 lb. confectioners' sugar, more or less
Coconut
Peanut butter

Mix sugar and vanilla into mashed potato to a soft dough stage, rolled out on waxed paper. Spread with peanut butter and roll up jelly-roll style. Slice in 1" lengths. Roll in coconut. You may need more sugar to make dough the right consistency to roll.
