DANISH BRAISED RED CABBAGE | |
1 med. (2 to 2 1/2 lb.) head cabbage 4 tbsp. butter, cut in pieces 1 tbsp. sugar 1 tsp. salt 1/3 c. water 1/3 c. vinegar (rice vinegar) 1/4 c. red currant jelly 2 tbsp. grated apple Slice cabbage finely, about 9 cups. Preheat oven to 325 degrees. Combine butter, sugar, salt, water and vinegar in heavy stainless steel or enameled 4-5 quart pot. Bring to boil until butter is melted. Add cabbage; toss with wooden spoon. Bring to boil again. Cover tightly and place in center of oven. Braise 2 hours, checking water level occasionally, 10 minutes before finished. Stir in jelly and apple. This can be prepared a day in advance, then reheat in microwave. Serves 6. |
