SHRIMP PAESANO 
1 lb. lg. shrimp
1/2 c. milk
1/2 c. flour
1/2 c. olive oil
1/2 c. vegetable oil
1 egg yolk
1-2 cloves garlic, minced
1 stick butter
Juice of 1/4-1/2 lemon
1-1 1/2 tsp. parsley
1-1 1/2 tsp. chives

Clean and devein shrimp. Soak in milk for 10-15 minutes. Drain and dredge in flour. Saute in oils for 5 minutes. Place shrimp under preheated broiler and boil without turning or moving for 5 minutes or until golden. Drain and serve with sauce.

Note: For smaller shrimp boil 3 minutes.

SAUCE:

In heavy saucepan, mix egg yolk and lemon juice. Add 1/2 stick butter. Stir over low heat until butter is melted. Add garlic and remaining butter. Stir until butter melts. Add parsley and chives. Serve immediately. Do not overcook. Suggest serving with favorite pasta.
