WILTED CABBAGE SALAD | |
1 head cabbage, finely shredded Salt and pepper to taste 2 garlic cloves, chopped 1/2 c. diced lean bacon 2 1/2 tbsp. oil 1 1/2 tbsp. wine vinegar Shred the cabbage very finely, removing the core and heavy ribs. Sprinkle it with salt and pepper and add chopped garlic cloves. In a heavy skillet heat bacon, oil and vinegar over moderate heat until the bacon has rendered its fat and is tender. Put the cabbage in warmed salad bowl, pour over the cabbage, the bacon mix. Toss well. Serve at once. |
