BAKED CARAMEL CORN 
6 qt. popped corn
2 sticks butter
2 c. brown sugar
1/2 c. light corn syrup
1 tsp. salt
1/2 tsp. baking soda
1 tsp. vanilla
Unsalted peanuts

Melt butter; stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly; boil without stirring for 5 minutes. Remove from heat; stir in soda and vanilla. Stir until it foams up. Gradually pour over popcorn; mix well. Turn into large aluminum foil turkey pan. Bake at 250 degrees for 1 hour, stirring every 15 minutes. Remove from oven and cool. Store in tightly covered container. Can be frozen. (NOTE: Stir often while cooling so popcorn won't stick together.)
