GREEN BEANS WITH EGG SAUCE 
2 lbs. fresh green beans
1 onion
6 tbsp. oil
3 tbsp. vinegar
1/2 tsp. salt
1/2 tsp. pepper

EGG SAUCE:

6 tbsp. mayonnaise
2 tsp. prepared mustard
4 tsp. vinegar
Salt
3 hard boiled eggs, chopped

Steam fresh beans until tender (about 16 minutes in microwave on high setting, be sure to cover). Drain. Layer green beans and sliced onion and marinate overnight in oil and vinegar, salt, and pepper. Drain EXTRA WELL before serving. Serve with egg sauce. To prepare egg sauce, place all ingredients in blender or food processor and mix well.

Since microwave ovens vary in power, you may need to adjust your cooking time.
