CHOCOLATE CARAMEL COOKIES | |
1 cup butter (no subs) 1 cup and 1 tbsp. sugar divided 1 cup brown sugar, packed 2 eggs 2 tsp. vanilla 2 1/2 Cups all-purpose flour 3/4 cup baking cocoa 1 tsp. baking soda 1 pkg. Rolo candies (13 oz.) 1/2 cup chopped pecans (optional) Cream butter, 1 Cup of sugar and brown sugar in a mixing bowl. Add eggs and vanilla. Mix well. In a separate bowl, combine flour, cocoa and baking soda. Add to creamed mixture just until combined. Shape dough by teaspoonfuls around each candy. Combine pecans and sugar. Dip each cookie in half halfway. Place with nut side up on ungreased baking sheets. Bake at 375 for 7 to 10 minutes or until top is slightly cracked. Cool for 3 minutes before removing from sheet. Move to rack to cool completely. Yields about 5 dozen. |
